Five Days of Eats #4

Ah, I’m waking up in Ohio this morning with Simi and sweet little Osh! We’re having a blast working on Finally Free together this week! Yesterday we got blowouts, had a photoshoot, and today we are filming new bonus videos which will be available to you in a couple of weeks!

We’ll be hosting an Instagram LIVE event TONIGHT at 5:00 pm eastern over on @finallyfreeprogram‘s Instagram. We’ll be talking about having guilt free girls nights! Fun, right? I hope you’ll join us!

Ah, so excited for that!

Before we dive into to this massive daily eats post, I want to remind us that the purpose of sharing these posts is not for you to compare your eats to mine.

Rather, I do these posts to 1) encourage you to know that it is possible for you to listen to your body, forgo all forms of dieting, and feel great in your own skin and 2) show you that I walk my talk. My hope is for you to feel more freedom in your life because of these posts.

Day 1

Morning cappuccino – at Ascendo with my GF Asia

Breakfast – after coffee I came home and had breakfast with Marco. Toast, toasted with olive oil drizzled on top (before toasting), and topped with avocado + two scrambled eggs on the side topped with chives. Yum!

Mid-morning snack – on my walk to the gym I snacked on this GoMacro bar

Lunch – leftover pasta (chicken sausage, red sauce, and mascarpone cheese)

I totally forgot to eat dinner this night. I got busy with clients through the day, wrapped up work, and then went to see Beauty and the Beast with my girlfriends. When I got home, I was so tired that I climbed right into bed.

Day 2

Breakfast – same thing as the day before. Avocado toast with two scrambled eggs. This time I ate the leftover 1/4 of avocado straight out of the shell, too.

After breakfast I went to coffee with Asia at Ascendo. I told you guys (on Instagram – @healthyhitsthespot) I’ve been LOVING cappuccino’s lately!

Lunch – paninis made with leftover brisket, avocado, cheddar cheese, and garlic aioli mustard. Soo good.

Dinner – pasta with brown rice noodles, ground beef, mushrooms, organic tomato and basil red sauce, sour cream (a heaping spoonful mixed in after everything is cooked), topped with parmesan cheese, fresh basil, and pepper. Yum! Loved this…!

Day 3

Breakfast – avocado toast. I actually ate this one at the kitchen table, but took a picture in my office because my camera was in there.

Lunch – leftover ground chicken chili topped with cheese and sour cream

Afternoon snack – an apple and PB

Dinner – holy YUM. I loved this dinner so much. A panini with chicken (I had just baked it and it was so moist!), pesto, pepper jack cheese, and tomato. SO good. I can’t wait to have this again…!

Petite-treat – salted peanut caramel Talenti (I finally cracked this baby open) with two dark chocolate peanut butter cups chopped up and added to the top. This was such a tasty treat – I savored every bite!

Day 4

Brunch – a super late breakfast of two scrambled eggs and the last of our leftover brisket mixed in, topped with cheese and sour cream with a side of toast (toasted with olive oil drizzled on top).

Dinner – leftover (we make eating at home so easy with lots of leftovers!) pasta – rice pasta, ground beef, mushrooms, organic tomato and basil red sauce, sour cream (mixed in), topped with parmesan cheese, fresh basil, and pepper. Mmm, so good!

Petite-treat – a scoop of Talenti salted peanut caramel with two dark chocolate peanut butter cups crushed on top. Mmm, so good!

Day 5

Breakfast –  ah, I love panini’s! This one had two eggs, one slice of pepper jack cheese, and tomato. Would have been awesome with avocado too, but I was all out.

Lunch – the last of our leftover brown rice pasta with fresh basil and parmesan on top

Snack – an apple and the last little square of cheddar cheese that was grated to death (haha, hence the weird shape!)

Chocolate – chocolate gets it’s own category 😉 This one is the super super dark from TJ’s. Love!

Dinner – more panini’s for the win! These are filled with tomato, basil, fresh mozzarella cheese, chicken, and pesto. Yum!

    How do you get your paninis to look so beautiful wth grill marks?! Mine always turn out so smushed down if I even try to get the slightest grill marks 🙁

    • Hey Tiffany! I have a grill – do you have a panini press? I rub a little bit of butter on the outsides of the bread, stick em in the press, and voila! (These marks would not happen without the press). A simple George Foreman grill would work great too!
