As I was Health Coaching yesterday, Marco popped his head in my door and handed me this Passion Tea. I drank half early in the day, and the other half later in the night. A large was too much for all at once. Plus it was a great treat later on :)

The night before, I worked until midnight, and then had to drive home 30 minutes, so he knew I was super tired Sunday. He did this just because. Seriously… I feel so blessed that he always does such thoughtful things… I know that can be rare…

At 2:30, we packed up some lunch and had a picnic on the beach, and studied our Counseling Book. We are starting counseling together to each deal with some things from our past. I’ve never done counseling with someone who is licensed before, so we will see how it goes :) I’ve only done counseling through my Church.

After our little picnic, we came home and watched a movie that I LOVED when I was little…. will Marco kill me if I tell you all the name? Awe heck…. I’ll just tell you, and you can all applaud him for caring enough to sit through this movie! ;-)

CLUELESS!

Dang, those roses are beautiful! Close up!

After our movie, we had dinner. I had some leftover Polenta, so I made a Polenta Casserole with steamed chicken, steamed broccoli, gorgonzola cheese, mozzarella cheese, and roasted bell pepper + eggplant spread

Delish!

I split the little casserole into 4 portions. Now I have some for lunch this week!

After dinner, we put our warm clothes on and headed to the park for a 2.6 mile fast walk. I love walking :)

Okay, it’s now Monday, and I’m off to make us lunch before our studying & appointment. Wish us luck!

I will definitely post it the next time I make it. For now, use this recipe! I based it off this, but switched a few things around. http://www.healthyhitsthespot.com/2012/07/17/beg-worthy-banana-bread/

How is the egg prepared in the “Whole wheat toast with avo, 1 egg, and 1/2 slice of muenster cheese”. Look yummy but does not look like an old fashioned omelt.

I made the egg as if I were making 2 eggs over-easy, and right before I flipped the egg I smashed the yolk so that it cooks when I flip it :)

I say “2 eggs” because I cooked two (for me and a friend) and then split it in half

Thanks!! That makes sense….looks yummy. I will try soon. I tried the TJ’s organic eggs (the ones with the bright green lid) and I must say, they cook so much better than regular eggs. And they make the house and pan get stinky either…..if you know what I mean.

Thank you Lyndsay. I don’t have an exact recipe, but I will tell you how it went down ;)
I bought a log of Polenta from Trader Joes, and sliced it up and laid thin a thin layer accross the bottom of a coated casserole dish. I then layered chicken that I had just steamed and shredded. Next, I poured tomato sauce or roasted bell pepper sauce accross the top. Whichever you have. I then layered a bit more polenta and chopped/steamed broccoli (steamed then chopped). Next, I sprinkled gorgonzola + mozzarella cheese over that. I baked it at 350 for about 30 minutes (check on it until the edged and cheese get a little bit golden brown. I believe the Trader Joes log of Polenta is pre-cooked. That’s the only one I’ve ever used :)
