Packing Lunch

So, Saturday was a very busy day. I had worked 12 hours the day before, and was planning to hit the road and work another 12 hours.

I started with a filling breakfast

Uncle Sam’s Cereal and toppings:

  • raisins
  • cocao powder
  • almonds
  • chia seeds
  • sunflower butter
  • 1 banana
  • almond milk

And then of course I mixed it all together and felt like I was eating Overnight Oats. Messy, but so good!

For lunch, I made a sandwich, and packed many other things for my very long day

I packed:

  • carrots + hummus
  • sliced cucumbers mixed with rice vinegar and sea-salt (yum!!)
  • salad with everything in the world and dressing on the side (dressing: olive oil + apple cider vin + soy sauce)
  • raw almonds
  • Larabar
  • apple

I ate most everything… When I got to my job in Santa Barbara, the sweet Mom had bought me a Kale + Beet Salad from Whole Foods. I ate it with my Sandwich, and was soo full. Thank God, because I didn’t get a chance to eat again until about 9pm. The little one and I went on two long walks, played all day, and tried to keep happy at night. She was fighting sleep a little bit so we called my Mom and put her on speaker phone and my Mom entertained her for a good 20 minutes. It was soo cute. Her most favorite thing all night was when I would rock her and sing to her… that put her to sleep.. that pretty much melted my heart…

When I ate again, I wasn’t in the mood for my Salad, so I had a Coconut Water (from their place), my cucumbers, some of my almonds, and my Larabar. Plus, about 80oz of water throughout the time I was there..

I left Santa Barbara at about 11:30 and got home around 12:30… With my eyes half opened I walked into my apartment to see a huge vase of flowers sitting next to my bed…

Soo, sweet… and with all the perfect words… I’m a words of affirmation girl ;)

Marco wrote me a card saying how much he appreciates my work, and how my work ethic never goes un-noticed…. And he added “even though I’d rather be spending time with you ;) ” Also, he thinks he’s “lucky to marry such an amazing woman.”

Hmm…. I don’t know girls, but I’d say I’m the lucky one! This was such a sweet surprise..

Hi Paige,
Love your emails … have a question. Do you make your own humus? I do but am always looking for a lower calorie version. Also, I make a deep green drink that’s killer. I have it every other day as it’s expensive to make. It includes spinach, powered chlorella, spirilina, coconut oil. gogi berries, blue berries, 1/2 banana, raw cacawa, powered vitamix. I can give you the recipe if you’re interested.
