Good morrrrrning! How was everyones day yesterday? I babysat pretty much all day, and now I have the day off to relax. It’s going to be a nice day
breakfast: non-fat plain greek yogurt w/ banana bread chunks, raisins, and unsweetened shredded coconut + honey
snack: green machine!
I like the boost side of things
lunch: gluten-free rice pasta w/ organic marinara sauce and vegan pepper jack cheese
I’ve tried this cheese a few times now, and it’s really grown on me! Do you all like it?
Mama Pea always refers to it in her Vegan Cookbook, so I decided to try it a few times to let my taste-buds adjust. Now I crave it!
What are your favorite Vegan foods? (Other than all the best whole food choices, whole fruits veggies, lentils, etc…)
snack: apple + 1 tbsp. creamed honey & black coffee
dinner: brown rice w/ tofu, tomato, avocado + low-sodium soy sauce
late night babysitting snacks: flaxseed chips w/ vegan cheese & salsa
1 piece 70% dark chocolate
petite treat: peanut butter dark chocolate kind bar
My body was preeeetty snacky yesterday! Usually when I have a day where I am wanting lots of small snacks, my body is begging for energy. That was definitely the case yesterday! I was really sleepy! It will be nice to have the day off today to get things done around the house & relax. Plus, I have plans for dinner tonight with friends from my Anatomy Class (last year) at my favorite restaurant. Hoping those plans work out for everyone
I am kinda in the mood to bake today! Or cook something… Hmm…. Maybe I’ll pull out Mama-peas cookbook again!
