One thing I have been really enjoying lately is Quinoa!
Dr. Gillian Michaels would describe quinoa as Good Protein:
“Vegetable proteins are easy to break down in the body. Quinoa is an example of a vegetable protein that is very easy to digest. It looks like a grain and you can make tasty porridge with it..”
Channa Masala & Greens Quinoa

To cook Quinoa, get out a pot and boil 2 parts water and 1 part Quinoa.
For example, a basic recipe I use for 2 servings (save half for later) is dump 1 cup of Quinoa and 2 cups of water into a pot on high heat. Bring to a boil. Cover with lid. Reduce heat to a simmer and let sit for about 15-17 minutes (until all the water is absorbed). It’s VERY easy to make!

One way you could eat Quinoa would be with this Channa Masala from Trader Joes.
This is a delicious blend of onions, tomatoes, chickpeas, water, canola oil, spices, ghee (butter, milk), garlic, salt, cilantro, mango powder, turmeric, and bay leaves. (Don’t let the butter and milk scare you- this is not a high Cal food if that’s where your brain is going…)
It’s really tasty! Pop it in the microwave for 4 minutes and bam! You’ve got yourself a 20 minute meal. If you’re only feedling one person, you can split this into two portions and save one for tomorrow!
I added greens in this recipe. Southern Greens from Trader Joe’s cooked with Olive Oil, garlic, and a couple extra veggies (mushrooms, bell bepper)
Quinoa & Soup

Another simple way to eat Quinoa, is pour your favorite soup over it!
Gives it more substance to make the soup a meal, and packs in extra protein!
Breakfast Bowl Quinoa

Try Quinoa in a bowl with eggs, soyrizo (or your favorite breakfast tofu/meat), avocado, and fresh pico de gallo!

This was really good- mostly due to the incredible pico de gallo on top! My Dad made this fresh, and I will absolutely be sharing the recipe once he teaches me! It’s sooo good!

Now I wish I had some avocados and quinoa! That looks SO yummy! You can bet as soon as I am able I will make something involving avocados and quinoa! HAHA.

Great ideas Paige! Thanks. I’ve been eating this a lot lately, too. Recently I made a casserole mixing the quinoa with spinach, garlic, reduced fat cheddar cheese, onion, and sage- sprinkled with a little Parmesan and sliced tomatoes on top. Threw in the oven for 45 minutes and it was delicious!

my favorite way to eat quinoa is “leftover style” i take all the leftover veggies I have and chop them pretty small with my chopper…. last week was brocollie, cauliflour, green peas, bell pepper, carrots….throw some garlic, onion, and sundried tomatoes in a skillet…once cooked add your leftover veg…cook till warm. Add in your quinoa (in the UK they have pouches by food doctor that are pretty much already cooked. you just have to steam in the microwave for 2 minutes)…..then add in your meat/tofu (if desired)…. this is the easiest recipe ever. such a great idea when you’ve had a long day or you don’t have much time.

I love quinoa! I remember the first time I heard of it, I called in Quin-oh-uh hahaha Get’s me every time! I want to try it with Channa Masala, it looks so good! My favorite way to eat Quinoa is in a parfait with greek yogurt, fruit, and nuts, or in my salad! I’m so obsessed, I’ve even made quinoa crackers!

I have had it before with yogurt! Good call- it’s great! I totally said it the same way. I think most people who just hear of it say it like that! Haha… kind of like how no one really knows how to say edamame!
