Day 3: Healthy Faux Granola!

May 23, 2012 · 6 comments

Good morning everyone! I have a treat for you today!

Gluten-free “faux granola!”

It’s made with Coconut Oil, Slivered Almonds, and Unsweetened Shredded Coconut

First, put about 1/2 tsp. of Coconut Oil in a pan over medium heat and add slivered almonds

Once those brown (it will be quick! Keep your eye on them!) put them aside in a bowl

Add coconut to the pan next

I use unsweetened

Once the Coconut browns (this also happens very fast!) pour in into the mix of slivered almonds

Flatten it out in a small bowl or baking pan

Set in the freezer

This literally takes two minutes

Store it in the fridge so it keeps that crunch texture, and in the morning, or as an evening treat, put it on top of some greek yogurt with fruit, honey, and 1 tbsp. of your favorite nut butter

See, even Noah was intrigued!

Such a good, SIMPLE treat! Makes yogurt more fun!

Hope you all have a great day! This was my breakfast :)

Now I am off to the Gym. I have a 2pm phone appointment with the Institute for Integrative Nutrition!!

Yes, it IS awesome! I love it, it has taught me so much and has really changed my life. I started in October and am over halfway through my program. And I’ve already got a few paying clients! Do you plan on using it for health coaching when you finish the program?

Looks good and very easy. Lassen’s! My husband and I used to shop there when we were visiting Santa Barbara. Coconut flakes (aka coconut chips) are one of my new fave coconut products, that’s what I’m putting in my granola right now. Coconut does brown so fast, you have to watch it!
